Black mango sticky rice
One of my fav fav favorite desserts is mango sticky rice. Upgraded to black rice is even better. I didn't have any sticky rice around so it was made with just black rice. It's very simple to make and I bet it's super fattening. fml
My recipe serves about 5.
2c black rice soaked overnight
1 can coconut milk. *you probably don't need the whole can
1/2 c sugar
dash of salt

The coconut milk needs to be sweeten. Warm the coconut milk and add the sugar (probably more than 1/2c) a bit of salt and set aside.
Boil water, about 2-3c, add a bit of salt and pour rice and set to simmer for 30 min or so till soft. Replace 1c of water with coconut milk if you want it sweeter or add sugar to sweeten the rice. Experiment to suit your preference. Drain excess water and mix in 1c coconut milk with the rice. Let it sit to absorb flavor.
To serve just get a ramekin, fill it up and make the shape. Cut up mango and pour coconut milk.
I would suggest to not go heavy on sugar in the process. To make it sweeter just add condense milk when you serve.

To make it more sticky rice, get some glutinous sticky rice and use a 1:1 ratio of black and white. It makes a purple and it's better texture.
To make it less fattening, use less coconut milk T.T
